Cooking for kids
Being a working mom and wife of a football coach who's working 15-18 hour days, a lot of the daily chores become very difficult when you don't have both parents around. Especially in the evenings when dinner, dishes, baths and cleanup come into play.
After 2 weeks of having to learn how to juggle two boys and the evening routine, I think I'm finally at a point where I'm comfortable and got a relatively good flow going. Watch I probably just jinxed the crap out of myself for tonight but oh well.
When boys get hungry, its no joke. If I don't have dinner ready by 5-5:30pm, all hell breaks loose in the Parry House. I have two crazy boys screaming and the screaming makes momma tense and nervous and a clutz. To avoid making nasty meals due to the time crunch (and yes I have had to throw some meals away because they were yucky) I have tried to plan evening meals with more organization and planning. Boy I am learning a lot about cooking as a mom, its totally different then when you don't have kids... Basically I have had to learn to cook good solid healthy meals fast and in the least amount of steps possible. I've learned to prep early and throughout the day (on those lovely days I get to work from home) and also try to pre-cook/freeze some dishes that take a long time. Sometimes I make 2 dinners when the boys go to sleep. I make the food and freeze it so that I can re-suse it for the week. I try not to freeze meals for more than 1-2 weeks. That's been life savior. There's no other way I would be able to get them to eat a well-balanced meal. All the foods that are easy to get are nasty and unhealthy. I used to go to whole foods when I didn't have time to cook dinner but GOOD OLE SACRAMENTO has no whole foods within a 20 mile radius.
Side Note: SERIOUSLY SACRAMENTO? Get on this and GET MORE WHOLE FOOD STORES! Jeeeez!
I made meatloaf and a garlic herb rice dish with a side of cooked/steamed peas, green beans and carrots. DELICIOUS! The boys LOVED it. sometimes I watch them in awe at how much they actually consume, especially my 14 month old Kian. He MUST be going through a growth spurt because that boy can throw it down! LOL!!!! LJ (my 2.5 year old) eats a lot too and can I just say, he is the cleanest eater ever. Good job boys! I have some left overs and usually our nanny feeds the kids the left overs for lunch. What is on tap for dinner tonight? I HAVE NO IDEA.. HAHAHHAAA...
After all this talk of me planning, tonight I got nothing planned. HOLD ON. Let me find a good (new) recipe tonight to try...
